Spike and Jessie Nguyen are back at the corner of Independence Blvd. and The Paseo full time now with the second location of the Vietnamese-French Bistro concept restaurant i-Pho Tower. Nguyen, his wife Jessie and local dignitaries cut the ribbon this morning celebrating the grand opening of their second i-Pho Tower location. The menu is smaller but promises many of the same favorites including the hugely popular sweet potato and shrimp appetizer, dumplings and of course Pho. The restaurant will be open for business beginning this evening with a limited menu and fully operational by this weekend.
