Camper Stew

Need a quick dinner idea that uses items you may already have in your freezer and pantry? This timeless recipe was a favorite at scout cookouts for ease of preparation and versatility while feeding a crowd for low cost to boot.

40 oz, can tomato juice
2 cans diced mixed vegetables, drained
I can diced tomatoes
1 pound ground beef/chicken/turkey

In a dutch oven or large pot, brown the ground meat and drain off fat. Add the tomato juice, mixed vegetables, and diced tomatoes. If you have fresh onion or celery, you can dice a small amount and add that as well. For a heartier or meatless meal, add one cup of uncooked macaroni plus one cup of water. Season with salt and pepper to taste; for a spicer version add up to one teaspoon chili powder. If you added macaroni, heat until macaroni is tender. Stew is ready to serve when all ingredients are thoroughly heated. Serves 6-8.
